Cream Cheese, Rotel, and Sausage // RickKat Ranch

 One 8 oz block of plain cream cheese, softened at room temperature

One 10 oz can of Rotel Tomatoes and Green Chiles - Don't drain (store brand is fine, too) About 3/4 cup of browned Breakfast Sausage (your favorite roll variety) Cut the cream cheese into chunks and heat until melted. As it's heating, add the can of Rotel and stir. Once the cream cheese has melted, add the cooked sausage, stir and allow to heat thoroughly. Serve with Corn Chips, Tortilla Chips or your favorite crackers.

For the Cheesy Chili and Sausage: One 15 oz can of your favorite Chili One 8 oz block of Velveeta (or store brand) cheese About 1/2 cup browned Breakfast Sausage (your favorite roll variety) Spread the chili in a glass baking dish and cover with the Velveeta (that's been cut into chunks for easier melting) and the cooked sausage. Cover dish with aluminum foil, seal the edges and bake in a preheated 375° F oven for 35 minutes. Stir to blend and evenly distribute the cheese and sausage. Serve with Corn Chips, Tortilla Chips or your favorite crackers.
