Black-Eyed Pea Casserole

  Ingredients 1   lb   of pork breakfast sausage 1/2   cup   of onions   chopped 1/2   cup   of green peppers   chopped 1   can of Rotels diced tomatoes and green chilies 2   cans of black-eye peas 1/2   teaspoon   of Cajun seasoning 1/2   teaspoon   of oregano 1   can of cream of chicken soup 2   cups   of cooked rice 1   cup   of cheddar cheese   shredded Instructions Preheat oven to 350. Brown sausage, onions and peppers until sausage is no longer pink. Add can of Rotels, Cajun seasoning and oregano and let simmer for 10 minutes. Next add the 2 cans of black-eyed peas, cooked rice and cream of chicken soup to meat mixture. Put entire mixture in 2 quart casserole dish. Top with one cup of cheddar cheese. English Muffin Freezer Breakfast Sandwiches // Sharla // Freezer Meals 101

Ingredients 12   English muffins 12   sausage patties 12   eggs 2   Tbsp.   milk or heavy cream 12   slices   cheese salt and pepper  to taste Instructions Assembly instructions: Fry the breakfast sausage patties in a skillet until cooked through. Set aside. Preheat the oven to 325° and grease a 9x13 baking dish with nonstick cooking spray. Whisk together the eggs, milk, salt, and pepper until well combined. Pour the mixture into the baking dish and bake for 24 minutes or until set. Cut the eggs into 12 squares. Layer a sausage patty, egg square, and one slice of cheese between two English muffin slices. Wrap each sandwich in plastic wrap and place them in a resealable freezer bag. Store the sandwiches in the freezer. Serving instructions: When ready to serve, remove the sandwich from the plastic wrap and place it on a paper towel. Heat in the microwave until warmed through.

Make Ahead Cinnamon Freezer French Toast // Sharla // Freezer meals 101

When I make this, I use cinnamon bread from a local bakery and double or quadruple the recipe so that I can fill many bags with french toast in the freezer for busy morning. Servings :  8 Calories :  278   kcal Ingredients 1   loaf of bread   about 16 slices 3   eggs 3/4   cup   milk 1/4   tsp.   cinnamon 1/8   tsp.   nutmeg 1/2   tsp.   vanilla zest of 1/2 an orange Instructions Whisk together the milk, eggs, spices, vanilla, and orange zest. Heat a skillet or griddle to medium heat and grease with some olive oil. Dip each slice of bread in the egg mixture and cook on both sides until browned. Lay the cooked slices on a cookie sheet in a single layer. Place cookie sheet in freezer. By freezing them individually like this first, they won't stick together in the bag and will be easy to remove one at a time. Once frozen, place slices in a large resealable freezer bag.
