Granny’s Biscuits
Ingredients: 2 cups self-rising flour – sifted, plus bench flour ¼ cup of lard (you can also use shortening or chilled butter) ¾ - 1 cup buttermilk Directions: In a medium mixing bowl, cut lard into flour until mixture resembles coarse meal or crumbs. Make a well in the flour mixture and stir in enough milk to make a soft dough. The dough should pull away from the side of the bowl and stick to the mixing fork. Turn onto a lightly floured surface and fold dough over on itself about 10 times. Roll until desired thickness, about 1/2" thick. Cut with a 2 1/2" cutter, moving cutter straight up and down without twisting. Place biscuits in greased baking dish with their sides touching. Bake at 425° for 15-20 minutes, depending on thickness of biscuits. Remove from oven and brush with butter before serving. Chocolate Gravy Ingredients: 2 1/2 cups of water 2 cups of sugar, divided 3/4 c. flour 2-3 Tbsp warm water (or as needed) 2 Tbsp. cocoa powder Pinch of salt Directions: Mix water and 1 cup of sugar in saucepan, bring to boil over medium high heat. In separate container, mix flour, remaining sugar, cocoa powder, and pinch of salt until well combined. Add enough warm water to make a thick paste. Whisk mixture into boiling water, cook for 3-5 minutes whisking continuously until thickened. Add additional water if needed. Taste and add more sugar if needed. Serve warm over biscuits.
