Chicken Stuffing Casserole with Zucchini

INGREDIENTS

  • Creamy Sauce (If you want to use a 10 oz can of cream of chicken soup instead, you can)
  • 3 tbsp butter

  • 3 tbsp all-purpose flour

  • 3/4 cup chicken broth

  • 1/2 cup milk

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • Casserole Mixture
  • 2 zucchinis, diced

  • 1 yellow onion, diced

  • 6 oz box Stove Top Savory Herbs Stuffing mix

  • 4 tbsp melted butter

  • 4 cups shredded rotisserie chicken

  • 1/2 cup sour cream

  • 1/2 tsp salt

  • 1/2 tsp pepper

DIRECTIONS

  • Preheat oven to 350 degrees.
  • In a large skillet over medium heat on the stove, add the butter. Once it melts down, whisk in the flour. Once the flour turns a golden color slowly whisk in the broth and milk, and lastly, whisk in the salt and pepper. If your creamy sauce is too thick whisk in more water until your desired consistency. Set to the side. If you want to skip this step, you can use a 10 oz can of cream of chicken soup instead.
  • To a large bowl add the stuffing and 4 tbsp of melted butter stir well to coat the stuffing in the butter. Remove 3/4 cup of the stuffing and set it to the side this will be the topping for the end. In the bowl with the majority of the stuffing add in the creamy sauce, rotisserie chicken, zucchini, onion, sour cream, pepper, and salt stir well to incorporate the ingredients.
  • Spray a 9×13 baking dish with non-stick spray. Pour the casserole out evenly on the baking dish sprinkle with the reserved stuffing. Bake for 40-45 minutes. Enjoy

Walking Tacos

INGREDIENTS

  • 1 lb ground beef

  • 2 tbs taco seasoning

  • 1/3 cup water

  • Doritos chips OR tortilla chips

  • Optional Toppings:
  • Sliced tomatoes

  • Shredded lettuce

  • Diced onion

  • Sour cream

  • Cheese

  • Salsa

DIRECTIONS

  • To a large skillet over medium heat add the ground beef break the beef up and cook it through. Once cooked remove any grease in the pan then add in the taco seasoning and water stir and let simmer for 2-3 minutes.
  • To assemble top the Doritos chips with the taco meat and toppings. Enjoy!

INGREDIENTS

  • 1 yellow onion, diced

  • 2 medium zucchini’s, sliced

  • 1 lb fresh green beans, trimmed and cut into bite sized pieces

  • 1 tbs olive oil

  • 1 lb ground turkey OR ground beef

  • 1 tbs minced garlic

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp Italian seasoning

  • 1/2 tsp dried oregano

  • 1/2 tsp paprika

  • 14 oz fire roasted diced tomatoes

  • 1/2 cup chicken broth

  • 1 cup mozzarella cheese, shredded

DIRECTIONS

  • To a large saute pan over medium heat add in the oil and once it’s hot add in the diced onion and turkey. Break the turkey up with a spatula and cook it through.
  • Once the turkey is cooked add in the minced garlic and seasonings and stir well.
  • Turn the heat to low add in the diced tomatoes, green beans, zucchini, and chicken broth stir well and let simmer for about 10-15 minutes stirring occasionally until the vegetables are tender.
  • Sprinkle the cheese on top cover with a lid to melt the cheese then serve and enjoy!

Naan Bread Pizzas

INGREDIENTS

  • 4 medium sized naan bread pieces

  • 1 cup pizza OR marinara sauce

  • 2 cups mozzarella cheese

  • 1 cup sliced pepperoni

  • Italian Seasoning

DIRECTIONS

  • Preheat oven to 400 degrees.
  • Line a sheet pan with parchment paper. Place the naan on the sheet pan. Top the naan breads with the pizza sauce, cheese, pepperoni, and Italian seasoning. Bake for 7-10 minutes or until the cheese is melty and the naan bread is crispy. Enjoy!

Chicken Burritos

INGREDIENTS

  • 2 tbs olive oil

  • 1 1/2 lbs chicken breast, cubed

  • 1 tbs taco seasoning

  • 8.5 oz precooked Spanish style rice

  • 2 tbs water

  • 5 Medium tortillas

  • Optional Toppings:
  • Guacamole

  • Sour cream

  • Shredded cheese

  • Refried beans

  • Shredded lettuce

  • Sliced tomatoes

DIRECTIONS

  • To a large skillet over medium heat add in the oil. Once hot add the cubed chicken breast and taco seasoning stir and cook the chicken through. Add in the precooked Spanish rice and water stir well and let simmer for 2-3 minutes. Remove from heat.
  • Fill each tortilla with the chicken rice mixture and your favorite toppings.

Garlic Parmesan Chicken with Zucchini

INGREDIENTS

  • 1 pound chicken breasts, cubed

  • Salt

  • Pepper

  • Italian seasoning

  • Garlic powder

  • Onion powder

  • 3 Tbsp olive oil

  • 1 Tbsp butter

  • One medium zucchini, diced

  • One yellow squash, diced

  • 1/3 Cup grated Parmesan cheese

DIRECTIONS

  • Season chicken with the seasonings, add to your taste preference.
  • Heat 2 Tbsp olive oil in a pan over medium heat. Add the chicken and cook. Once cooked though, remove and set to the side
  • To the same pan add 1 tablespoon more olive oil and 1 tablespoon of butter. Once hot, add in the zucchini and squash, and season with salt pepper and Italian seasoning to your liking. Cook until tender.
  • Add back in the chicken and Parmesan cheese. Stir to melt the cheese down and serve. Enjoy!

Slow Cooker Chicken Burrito Bowls

INGREDIENTS

  • 1 lb chicken breast

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp pepper

  • 1 tsp salt

  • 1/2 tsp dried oregano

  • 1 lime juiced

  • 10 oz can Rotel

  • 15 oz can black beans, drained and rinsed

  • 15 oz can corn, drained

  • 2 tbs minced garlic

  • 1 red onion, diced

  • Optional toppings for the end:
  • Cooked white rice

  • Sliced lettuce

  • Avocado

  • Diced tomato

DIRECTIONS

  • To a slow cooker add all of the ingredients except the “toppings for the end”. Stir and place the lid on top cook on LOW for 6 hours OR HIGH for 4-5 hours or until the chicken is completely cooked. Once cooked shred the chicken with two forks and serve in a bowl with your favorite burrito bowl toppings.

Slow Cooker Sausage & Peppers

INGREDIENTS

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 yellow onion, sliced

  • 28 oz crushed tomatoes

  • 1/4 cup chicken broth

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp fennel seeds

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/2 tsp dried oregano

  • 1 lb sweet Italian sausage

  • Cooked white rice for serving

DIRECTIONS

  • To the slow cooker add the crushed tomatoes, broth, and seasonings stir well. Now add in the sliced peppers, onion, and sausage stir. Cook on LOW for 6 hours or until the sausage is completely cooked.
  • Remove the sausage and slice into disks. Serve over cooked white rice and enjoy!

Sheet Pan Bacon Eggs and Potatoes

INGREDIENTS

  • 20 oz refrigerated hash browns

  • 2 tbsp butter

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp Italian seasoning

  • 1/2 tsp dried thyme

  • 1/4 tsp dried basil

  • 12 oz bacon

  • 5-7 eggs

  • 1/2 cup cheddar cheese, shredded

DIRECTIONS

  • Preheat oven to 400 degrees.
  • Spray a sheet pan with non-stick spray. Add the hash browns, butter, and the seasonings. Stir to distribute the butter and seasonings spread the hash browns out evenly place the bacon strips over the top. Bake for 22 minutes.
  • Remove from the oven and crack the eggs over the top of the hash browns sprinkle the top with salt, pepper, and the cheddar cheese. Bake for an additional 20 minutes or until the eggs are set. Enjoy!

Marinara Beefy Rice Casserole

INGREDIENTS

  • 1 lb ground beef

  • 1 white onion, diced

  • 1 cup rinsed uncooked jasmine rice

  • 2 1/2 cups beef broth

  • 2 tsp Italian seasoning

  • 1/2 tsp salt

  • 3 tbs cream cheese

  • 1 cup marinara sauce

DIRECTIONS

  • To a large pot or dutch oven over medium high heat, add in the ground beef and onion. Break the ground beef up and cook it completely. Once browned, remove any grease in the pot. Stir in the rice, broth, and seasonings turn heat to low cover with a lid and let simmer for 15-20 minutes stirring frequently until the rice is tender. Stir in the cream cheese and marinara sauce once the cream cheese melts down serve and enjoy!
