Copycat Applebee’s Crispy Orange Chicken Bowls
Ingredients: CHICKEN 2 lbs chicken breast, cubed 1 egg 1 1/2 teaspoons salt 1/4 teaspoon pepper 1 Tablespoon vegetable oil 1/2 cup plus 1 tablespoon cornstarch 1/4 cup all-purpose flour oil (for frying) GLAZE 1 teaspoon minced garlic 1 1/2 teaspoons grated orange rind 1 cup orange juice 1/2 cup hoisin sauce Dash cayenne pepper (to taste) 1/4 cup granulated sugar Salt and pepper to taste Directions: Place chicken in a large bowl. Stir in egg, salt, pepper and oil. Mix well and set aside. Stir cornstarch and flour together in another large bowl and mix well. Add chicken mixture to the flour mixture, stirring to coat each piece well. Heat oil in skillet until 375 degrees . Carefully add chicken in small batches and fry 3 to 4 minutes or until golden and crisp. Remove chicken and drain on paper towels. Set aside while you make the glaze: Cool the oil in the skillet, remove all but 2 tablespoons & set over medium heat. Saute garlic in oil for 1 minute. Add remaining ingredients and bring to boil. Allow to boil for 3 minutes, stirring constantly. Reduce heat and simmer until sauce thickens to your liking. To serve, toss the chicken in the glaze. Serve over steamed rice with Asian vegetable medley and sliced almonds. Notes - I originally found this recipe at http://applebeesathome.blogspot.com/2..., however this URL is not currently working. Also, I normally use frozen popcorn chicken that I cook instead of battering and frying chicken as the recipe calls. Copycat Ruby Tuesday Onion Straws Ingredients: 1 large vidalia onion 2 c. buttermilk 2 c. all purpose flour 1/2 Tbsp salt 1/4 tsp cayenne canola oil for frying Directions: Slice onions into small chunks. Place in baking dish and cover with buttermilk. Soak for at least an hour. Combine dry ingredients and set aside. Remove onions from buttermilk mixture, shaking off excess liquid. Toss in flour mixture until well coated. Place in a single layer on a cookie sheet and place in the freezer for 1-2 hours. Heat oil to 375 degrees. Remove onion from freezer and fry in small batches until golden brown. Place cooked onion on paper towel lined plate and season with a little salt. Serve with sweet chili sauce or ranch dressing. Note - Sometimes I also add garlic powder & paprika to the flour. Copycat Ruby Tuesday Sweet Chili Sauce Ingredients: 1/2 c. mayo 4 tsp Sambal sauce (to taste) 2 tsp sugar 1/4 tsp cayenne pepper (to taste) 1/8 tsp paprika Directions: Mix all ingredients until well combined. Chill until ready to serve.
