Homemade Breakfast Muffins:
Ingredients: 4 tablespoons melted butter 1/4 cup vegetable oil 1 cup sugar 1 egg & 1 egg white 1 1/2 tsp vanilla 1/2 cup buttermilk 1 3/4 cup al purpose flour 2 tsp baking powder 1/2 tsp salt fruit or chocolate chips, your choice! Directions: Combine butter, oil, sugar, egg and egg white, vanilla, and buttermilk in a bowl and set aside. Combine the remaining ingredients in a larger bowl. Add the wet ingredients and combine. Divide batter into a 12 muffin pan. Bake at 350 for 12-16 minutes, until they are cooked through, and a toothpick comes out clean. Pretzel Brownie Bars recipe: Ingredients Crust: 1 1/2 cups crushed pretzels 1/4 cup granulated sugar 1/2 cup butter or margarine, melted Brownie: 1 box brownie mix 1/4 cup water 2/3 cup vegetable oil 2 eggs Frosting: 1 cup powdered sugar 2 tablespoons butter or margarine, softened 1/2 cup semi-sweet chocolate chips 1 teaspoon vanilla 2 to 3 tablespoons milk 1/2 cup crushed pretzels for topping NOTE: Y'all I messed up on the frosting and added too much powdered sugar. The frosting should be much darker! It was still good though! πThe correct amount is the 1 cup that the recipe calls for. ππ Directions: Heat oven to 350°F. In medium bowl, mix crust ingredients. Press in ungreased 13x9-inch pan. Bake 8 minutes; cool 10 minutes. In medium bowl, stir brownie ingredients until blended. Carefully spread batter over cooled crust. Bake 24 to 26 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean. Cool completely on cooling rack, about 1 hour. In medium bowl, beat powdered sugar, 2 tablespoons butter, melted chocolate and the vanilla with electric mixer on low speed until combined. Beat in 1 tablespoon milk until blended. Beat in additional milk, 1 tablespoon at a time, until frosting is desired spreading consistency. Frost cooled brownies. Sprinkle with crushed pretzels.
