Creamy Chicken Taco Soup

Ingredients

  • 2 boneless skinless chicken breasts

  • (1) 14 oz. can of black beans Rinsed and Drained

  • 1 cup frozen corn

  • 1/2 onion chopped

  • (1) 8 oz. can of diced tomatoes with green chilies

  • 2 cups chicken broth

  • 2 Tablespoons Taco Seasoning

  • 1 teaspoon Garlic Salt

  • 4 oz. Cream Cheese Diced into small pieces

  • 4 oz Sour Cream

  • 4 boneless skinless chicken breasts
  • (228 oz. can of black beans Rinsed and Drained
  • 2 cup frozen corn
  • 1 onion chopped
  • (216 oz. can of diced tomatoes with green chilies
  • 4 cups chicken broth
  • 4 Tablespoons Taco Seasoning
  • 2 teaspoon Garlic Salt
  • 16 oz. Cream Cheese Diced into small pieces

INSTRUCTIONS

  • Place all the ingredients except for the cream cheese in a 6 quart crock pot.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Shred the chicken and stir it into the crock pot.
  • Stir in the cream cheese, cover and cook on low for 1 hour or on high for 30 minutes to melt the cream cheese.
  • Top with your favorite taco toppings and enjoy!

  • Deep Dish Pizza

  • Ingredients

    • 1 refrigerated pizza crust in a can (13 oz)

    • 1 lb ground Italian sausage

    • 1/2 green bell pepper, diced

    • 1/2 onion, diced

    • 1/2 cup mini pepperonis

    • 1 (15 oz) can tomato sauce

    • handful cherry tomatoes, chopped

    • Italian Seasoning

    • 1.5 cups shredded mozzarella cheese

    Here’s how to make it

    • Preheat oven to 425 degrees F.

    • Brown sausage along with onions and peppers in a large skillet. Drain extra grease and return it to the skillet.

    • Add tomato sauce, Italian seasoning, tomatoes and pepperoni to the meat. Stir to combine then remove from heat.

    • Unroll pizza crust into a greased 9 x 13 baking dish, spreading it about halfway up the sides.

    • Fill pizza crust with meat and tomato sauce mixture. Spread evenly.

    • Top with mozzarella cheese.

    • Bake at 425 for 12-14 minutes.

    Barbara’s Rice Pilaf

  • Ingredients

    • 6 slices of bacon

    • 1/2 onion, diced

    • 1/2 green pepper, diced

    • 16 oz Minute Rice, uncooked

    • 2 cans Beef Consommé

    • garlic salt (or powder) to taste

    Here’s how to make it

    • Preheat oven to 375 degrees F.

    • Cook bacon in a large skillet until crispy, remove to a plate leaving bacon grease behind. Crumble the bacon.

    • Sauté onions and peppers in bacon grease until soft and then remove to the plate with the bacon.

    • In a 1.5 qt baking dish, add Minute Rice. Top with bacon and veggies.

    • Pour in 2 cans of beef consommé, season with garlic salt, stir to combine and cover tightly with aluminum foil.

    • Bake at 375 for 30 minutes, stirring halfway through.

    • Serve as a side and enjoy!
