 Chicken Tortilla Soup

2 chicken breasts 4 cups chicken broth 1 can Rotel tomatoes Black Beans drained and rinsed 1 can whole kernel corn ½ onion diced Cook the chicken and onion in the chicken broth. Once chicken is cooked, shred. Add tomatoes, corn, and black beans. Simmer on low. I cooked mine in the crockpot for 4 hours on high. Cabbage, Potato, and Kielbasa Skillet 1 kielbasa 2 cans of seasoned cabbage 2 potatoes diced Cook cut up kielbasa in a little oil. Once cooked, remove and cook the potatoes in the skillet until fork tender. Add the kielbasa and cabbage and let simmer for 10-15 minutes. Chicken Gumbo 2 chicken breasts diced 1 cup of rice uncooked ½ onion diced 1 green pepper diced 2 cups chicken broth 1 can diced tomatoes Frozen okra Prepare rice according to directions. Cook chicken, pepper, and onion until chicken is done (165 degrees) Add broth, tomatoes, and okra. Let simmer for 30 mins. Serve with rice Black Bean Enchiladas 10 tortillas 1 can red enchilada sauce ½ onion diced 1 zucchini diced Black beans drained and rinsed 1 can Rotel tomatoes 4 oz cheddar cheese shredded Saute veggies until tender. Add in tomatoes and black beans. Season to taste Build enchiladas with filling and place in casserole dish. Cover with enchilada sauce and cheese. Bake at 350 for 30 mins. Cheesy Chicken Broccoli and Rice Skillet 2 chicken breasts diced ½ onion diced 1 cup of rice uncooked Frozen broccoli 4 oz cheddar cheese shredded 1 can cream of chicken 2 cups chicken broth Prepare rice according to directions. Cook chicken and onion in skillet until chicken is done (165 degrees) Add cooked rice, cream of chicken, and broth to skillet and bring to a simmer. Add cheese and broccoli to skillet and give it a stir! All Things Mandy
