Crunchy French Toast Sticks
INGREDIENTS
- 6 large eggs
- ½ cup half and half
- 1 Tbsp vanilla extract
- ½ cup sugar
- 1 tsp cinnamon
- 1 ½ cups bread crumbs
- 1 ½ cups sweetened cereal, crushed to fine crumbs
- 2 Tbsp salted butter, melted
- 12 slices bread, cut into 3 strips
INSTRUCTIONS
- Crack the eggs into a shallow dish, like a pie plate. Add the half-and-half, vanilla, ¼ cup sugar and ½ teaspoon cinnamon. Whisk lightly until combined; set aside.
- In a separate shallow dish, stir together the breadcrumbs, crushed cereal and remaining ¼ cup sugar, and ½ teaspoon cinnamon. Use a fork to stir in the melted butter.
- Dunk the bread strips in the egg mixture, turning to coat. Then lay them in the dish with the crumb mixture, turning them over, sprinkling, and pressing so the crumbs totally cover the surface. Place on a lined baking sheet to either bake or flash freeze for later.
- To bake, preheat the oven to 425°F. Bake until golden brown around the edges, about 10-12 minutes (15-18 minutes if baking from frozen).
Egg Muffin Cups
INGREDIENTS
- 1 lb breakfast sausage (or any cooked meat)
- 1 whole onion, diced
- 15 large eggs
- 1 dash salt
- ¼ tsp black pepper
- 1 whole bell pepper, diced
- 1 cup cheese, grated
INSTRUCTIONS
- Preheat oven to 350°F. Spray muffin tin with cooking spray.
- Cook the sausage over medium-high heat until it's almost done.
- Add the onion and cook over low heat, until sausage is cooked and onion is translucent. Remove from heat and set aside to cool.
- Mix together eggs, salt, pepper, and whisk until combined. Add cheese and bell pepper and mix in. Once the sausage is cool, mix it in.
- Spoon into the muffin cups.
- Bake for 10-12 minutes until puffy and just set for mini muffins, or 20-22 minutes for regular muffins.
Homemade Waffle Recipe
INGREDIENTS
- 2 cups flour
- ½ cup sugar
- 4 tsp baking powder
- 1 tsp salt
- ½ cup oil
- 2 eggs
- 2 cups milk
- 1 tsp vanilla
INSTRUCTIONS
- Stir dry ingredients together. Combine liquid ingredients.
- Mix wet and dry ingredients together.
- Pour batter into waffle maker.
NOTES
Flash freeze leftover waffles on a sheet pan, then add to a freezer bag. Reheat in a microwave

INGREDIENTS
- 2 cups fruit
- 1 cup veggies
- ½ cup yogurt
- 1-2 cups liquid
INSTRUCTIONS
- Add all ingredients to a freezer bag and freeze until ready to eat.
- Add to blender. May need to add additional ice or liquid until it reaches the correct consistency.
Easy Sweet Potato Breakfast Hash
INGREDIENTS
- 1 sweet potato
- ½ onion, diced
- 3 tbsp oil
- 1 tbsp minced garlic
- 2 hard-boiled, fried, or scrambled eggs
- salt & pepper, to taste
INSTRUCTIONS
- Wash and cube sweet potato.
- Sauté onion in 3 Tbsp oil on medium-high heat with 1 Tbsp minced garlic for 1-2 minutes, until onion begins to get soft and translucent.
- Add sweet potato and cook until potatoes have reached desired softness.
- Transfer into bowl of choice, top with egg.
- Season with salt & pepper to taste.
NOTES
You can freeze some of the potato mixture for later. Just warm in the microwave and top with a fresh egg!
